There is something really magic about Chai; it takes a good cup of tea to that next level. It really is easy to do at home and with a few simple spices makes a cup of tea quite special.
I find that the warming spices in the Chai makes me feel calm and relaxed and maybe the ritual of making this helps too. Whatever it is, its a nice ritual to start for yourself, and of course to share with friends & family.
Below is a simple Chai recipe to get you started on your journey.
thumb size piece of fresh ginger, cut into thin rounds
2 organic cinnamon sticks
1/2 teaspoons organic black peppercorns
10 organic whole cloves
6 organic cardamom pods
1/8 organic teaspoon of nutmeg
4 cups cold water
4 heaped teaspoon of organic black tea (preferably Darjeeling)
2 cups whole milk ( any milk can be used)
1/4 cup raw sugar ( you can use maple syrup or honey depending on your taste)
How to prepare the chai
Combine first 6 ingredients in medium saucepan. Using mallet or back of large spoon, lightly crush or bruise spices.
Add 4 cups water; bring to boil over high heat. Reduce heat to medium-low, partially cover pan, and simmer gently 10 minutes.
Remove from heat. Add organic black loose leaf tea of choice, and steep 5 minutes.
Add milk and sugar ( or sweetener of choice). Bring tea just to simmer over high heat, whisking until sugar dissolves.
Strain chai into teapot and serve hot.
Other spices that can be added are fennel, all spice, coriander, licorice root whatever you like really, the fun of chai is there is no wrong answer just experiment and refine to your taste.
